If you’re worrying about how to store your sweet treats, you are not spending enough time enjoying them! While a lot of grocery store chocolates are meant to have a very long shelf life, the ingredients we use are meant to be enjoyed sooner rather than later. That said, with proper care you don’t need to worry about your North South Confections going “bad.”
Store chocolate and other confections in a cool, dry place with good ventilation, away from direct sunlight or any kind of heat source. Chocolate that’s been moved in and out of a refrigerator for example might show “ a bloom,” a whitish coating that’s harmless--it’s just a change in consistency of the sugar or fat in the chocolate. Also, chocolates can absorb odors from the refrigerator or other contained spaces, lets let’s avoid that!
If you are in an unusually hot environment and must refrigerate your North South Confections, wrap the box in airtight plastic, and let it come back to room temperature before you serve it.
Finally, don’t worry about your chocolates or other confections surviving their shipment to you. We take great care to make sure they’re packed properly for the trip and for any seasonal weather on the way. It wouldn’t be luxurious if it didn’t taste exactly the way that we intended.
